I used to be a really good cook (for basic stuff, nothing using the Latest High-Priced Yuppie Produce or anything like that). I really don't like how much Ben and I depend on prepared foods. As the kitchen progresses, I am cooking again. So last night I made
The recipe:
2 cups split peas
6 cups water or broth (I used 4 cups of Imagine "no-chicken" veggie broth, because it was on sale @ the local buck-a-grape, and 2 cups of water)
1 great big potato, cut into 1/2 inch cubes
1 smallish yellow onion, ditto
4 stalks celery, chopped
2 bay leaves
1 tsp. Italian seasoning
1 tsp garlic powder (Buck-a-Grape didn't have any fresh garlic; this is equivalent to about 4 cloves)
1 tsp salt
Put it all in a big pot and simmer until the peas are mush (I used a crock pot on "high" and it took about 2 hours.) Cool slightly, and run through a blender. Like most soups, it improves as it "sits" in the fridge. This is the vegan/kosher version. The non-vegan/non-kosher version would include a ham hock, and no salt or other spices.
On a dietary basis, this is a good thing to eat (unless you are doing low-carb.) It has virtually no fat, the split peas add some protein, and the caloric content is relatively low. but it's quite filling.
